ABSTRACT: Highlighting antioxidant properties of whey multifermenté in dermo drinkable. V.STELLA, P.ALBRECHT * E.POSTAIRE In biological systems in aerobic organisms, free radicals are initially oxygen radicals. They usually give birth to other free radicals resulting from reaction with various biological molecules. Their production is regulated by enzymes such as superoxide dismutase, catalase and peroxidase, but also by “chelating” (scavengers) glutathione. As to the origin of the peroxidation of membrane lipids, an imbalance in the regulation of free radical production becomes toxic and causes a lot of damage in the body. They are, indeed, very much involved in change the process of aging, but also in certain heart diseases (ischemia reperfusion syndromes), inflammation (Crohn’s disease, rheumatoid polyartrite) or viral (AIDS). The membrane model chosen in this study to demonstrate the protective effect of a whey Multifermenté (LMF) is the erythrocyte [1]. In fact this model is very representative of the lipid peroxidation that can cause free radicals because its membrane is made up of many polyunsaturated fats and because it is directly exposed to molecular oxygen (primary source of free radicals). Test equipment and method KRL 400 [2] The hydrochloride of 2,2 ‘-azo-bis (2-amidinopropane) (AAPH) (Wako Laboratory), which generates free radicals in the presence of red blood cells causes a release of hemoglobin . The solutions were incubated at 37 º C in the presence of 400 mM of AAPH and a suspension of red cells to 22%. The kinetics of release of hemoglobin is monitored by spectrophotometry at 405 nm. This erythrocyte lysis is delayed and reduced in the presence of an antioxidant. The whey multifermenté multifermenté whey tested (LMF-344 SK CYT44) is obtained by fermentation of whey from selected strains of micro-orgamismes. This is then pasteurized ultrafiltered After this, please. The products studied were: LMF SK 344 CYT-44 pure (LMF) and supplemented with vitamins A, C, E and B1 (CY 40) and vitamins A, C, E and B1 and beta carotene (CY S ). Results First, we evaluated the protective power of CY40 at different concentrations: pure, diluted 1/10 and 1/100. The results obtained are plotted on the graph (p.135). In the presence of CY 40 pure, antiradical protection is such (ie a 200% T50> 300 min instead of 100 min for the control) that erythrocyte lysis (after the 5 hours of study) is just initiated. CY 40 diluted 1/10 provides a protective power vis-à-vis radical attacks increased by 42%. Furthermore, the initiation phase and the reaction rate is slower. To follow the kinetics of erythrocyte lysis, other products in the range have been tested at a concentration of 1/10. CY 40 and CY S have similar radical scavenging properties. The kinetics of erythrocyte lysis in the presence of 40 or CY CY S has the same characteristics: the initiation phase and the rate of the reaction is again much slower than those observed in the absence of an antioxidant in the lysis medium. The Cytaphase ® formulations to optimize the protective power of the LMF. Conclusion This study shows a decrease in lipid peroxidation (caused by free radicals) in the presence of whey multifermenté (LMF. We can therefore consider that LMF participates in two principles established by the body to fight against the such aggression. [3] In fact, it allows one hand to increase the potential antiradical cells through redox-active substances it contains (thiol amino acids and peptides, for example), on the other hand to renew the internal energy (ATP) of the cell that is the main base of cellular homeostasis allowing him to fight against any condition of stress (in the case of the erythrocyte through the glycolytic pathway .) The original proof of the radical scavenging effects of LMF ensures cellular protection during exposure to phenomena generating free radicals such as overtraining, sun exposure, stress, tababac, pollution and other physiological situations abnormal. Additional studies are underway to better determine the clinical impact of such nutrition products. * P. Albrecht / Albrecht Pierjean References 1.
